My family loves it when we make homemade spaghetti sauce. When we make it, it’s always a big double or triple batch that easily has leftovers. Spaghetti and meatballs are such a family favorite, we often have frozen spaghetti and meatball sauce in the freezer. It makes a quick and easy weeknight dinner and is pretty amazing.

The Best Vegetable Spaghetti Sauce (with Meat)

The best spaghetti sauce comes from San Marzano tomatoes. San Marzano is a variety of plum tomato. These tomatoes have a strong taste, are sweet and less acidic. You can find canned San Marzano tomatoes at the grocery store. The label must clearly state that the tomatoes are of this variety.

If you want to make your spaghetti sauce completely from scratch using whole tomatoes instead of canned, you’ll need to remove the skins and stems from the tomatoes. The easiest way to remove the skin from tomatoes is to blanch them in boiling water for 1-2 minutes and immediately place them in an ice bath. The skin can then be easily removed. We also have another Baked Spaghetti Sauce recipe.

Marinara and spaghetti sauce are somewhat different things. Both tomato sauce. Marinara has many simple additional flavors such as garlic, salt and basil. Spaghetti sauce usually contains additional ingredients and spices such as onion, dill, parsley and oregano.

We don’t add ground beef to spaghetti sauce because we usually serve it with meatballs. However, you can always add meat to your mince. It is best to cook it well by adding it to the onion, then skim off the excess fat, or cook it separately and add it to the sauce before serving.

Slow Cooker Tomato Sauce Recipe

We serve this spaghetti sauce with homemade meatballs. These meatballs are full of flavor and are the perfect accompaniment to this sauce. They also freeze well, so you can have a full home-cooked meal waiting for you on those busy nights.

Cooking spaghetti sauce for a long time allows it to develop its flavor. This recipe requires 1-4 hours of preparation time. If you don’t feel comfortable leaving it on the stove, transfer it to a slow cooker and let it simmer. Set on high for 4-5 hours and you will have a well developed spaghetti sauce.

It is very easy to freeze leftovers of this sauce for later use. Just let the sauce cool, then pour it into gallon ziplock bags. Our family of four needs four scoops, so we only put four scoops in each bag. If you look at how much your family eats, you can get a pretty good estimate of what you need. Then you place all the bags on a baking sheet and put them in the freezer. Once they are frozen, you can rearrange them in my freezer but they fit nicely. When you’re ready to eat, simply thaw and reheat on the stovetop or microwave.

The easiest way to thicken your sauce is to boil off some of the liquid! Let the sauce simmer on low heat for about 5 to 20 minutes.

Be sure to keep an eye on it and stir often to prevent it from burning. This method doesn’t change your recipe in any way, so it’s a great option if you have extra time.

One way to deal with excess liquid in a sauce is to balance it with more solids. Although the tomato sauce itself is not solid, its thickness will still be sauce.

If you have extra tomato sauce in your kitchen, this is a simple addition that will only enhance the flavor of the sauce. You may end up with more sauce than planned, but it keeps well in the freezer so it won’t go to waste.

How To Make Tomato Sauce Less Acidic

Cornstarch slurry is a very simple way to thicken a sauce without altering the flavor in any way.

To make a slurry, mix one part cornstarch with one part water. As with any of these thickeners, you should add the mash slowly in stages. Stir each time you add a little, then see if you want to add more.

A roux is made by mixing equal parts flour and fat – usually oil, but in some cases butter is also used. It is a popular base for many creamy sauces because it creates a nice thickness right from the start.

Adding a roux gives your sauce a slight creaminess rather than just a doughy texture, so it’s a great alternative to a rich sauce. You have to reheat it in a separate pan before adding it to the sauce, which is something to keep in mind if you want to keep your kitchen cleanup to a minimum.

Roasted Tomato Sauce Pasta

Starch thickens things by absorbing liquid…and potatoes are basically starch. If you have leftover mashed potatoes, this is a very easy fix.

Otherwise, you should peel the potatoes and boil them in a separate pot or in the microwave. Then puree and add in small spoonfuls, mixing well before you decide to add more.

Here’s an option you might not have considered. The egg yolk will change the flavor of your sauce, but for carbonara fans, it’s a great way to thicken your sauce and try a new recipe.

You don’t want to add the egg directly to the sauce, as it curdles quickly in the heat. Instead, add it to a bowl with a few spoonfuls of hot sauce and stir before slowly putting it back into the sauce, stirring all the time.

Easy Spaghetti Sauce

Another easy way to thicken spaghetti sauce is to add ground beef or sausage. This meat contains fat, which helps thicken the sauce and add flavor.

Just sear the ground beef or sausage in the pan before adding to the sauce. You can also saute onions, garlic, and other vegetables with the meat to enhance the flavor of the sauce.

One key way to make sure your sauce isn’t watery is to bring it to a rapid boil first, then reduce the heat. This is especially important when using fresh tomatoes. If you are using canned tomatoes, be sure to dry them.
